1 box lemon cake mix
2 large eggs
½ cup vegetable oil
1 cup sweetened shredded coconut
Topping:
1 can strawberry, lemon, or lime frosting
1 ½ cups sweetened shredded coconut
10.5 oz bag Campfire mini fruit-flavored marshmallows
Preheat oven to 350.
In the bowl of your mixer, beat cake mix, eggs, vegetable oil, and coconut on medium-low until a stiff dough forms.
Using a 2-inch scoop, scoop dough onto a large ungreased cookie sheet, roughly 2 inches apart.
Bake for 10 minutes until edges just barely begin to turn golden.
Remove from oven and let cool on the cookie sheet for 5 minutes before removing to wire rack to cool completely.
Generously frost cooled cookies, then top with coconut and fruit-flavored mini marshmallows.
